Ethiopian cuisine is a symphony of flavors, colors, and shared traditions. Naturally rich in vegan dishes thanks to numerous Orthodox fasting days, it celebrates legumes, root vegetables, and warm spices. Eaten by hand, injera — a large fermented teff pancake that’s naturally gluten-free — serves as bread, plate, and meal companion, and is best enjoyed together.

For this edition, we’re collaborating with Roman, a chef passionate about her craft. She has spent years perfecting her recipes, each one more delicious than the last.
Everything is homemade, with love and generosity.
Her motto? No one leaves with an empty stomach. At her table, you can go back for seconds as many times as you like.
The first time I met her, someone walked in after the kitchen had closed. Without hesitation, she pulled out a chair and shared her own meal. That day, I understood that at Roman’s, you feed both the heart and the belly.
Together, we’re preparing a 100% plant-based menu that highlights original flavors from Ethiopia.
